Shrimp Tacos

If you love shrimp but don’t love the price, shrimp tacos are for you!
What you need
Shrimp
- 1 pound shrimp
- 3 cloves garlic
- 2 Summer squash
- 1 tbsp sunflower oil
- Taco seasoning
- 2 tbs each Chili, cumin, onion, garlic, salt
Salsa
- 1 cup tomatoes, diced
- ½ onion, diced
- 1 bunch, about a cup cilantro, chopped
- 1 lime
- Pinch salt
Toppings
- 2 cups Radish, shredded
- 2 cups carrots, shredded
- 1 Lime
Tortillas and more toppings!
- 12 tortillas
- 2 cups Lettuce, shredded
- 1 cup cojita, shredded
- ½ cup Sour cream
Instructions
Toss the shrimp in a small bowl with the taco seasoning and garlic. Heat a drizzle of oil a large skillet over medium high heat. Add the shrimp to the hot pan and sauté for 5-8 minutes, flipping occasionally, until the shrimp are cooked through.
Next you will need your Potatoes, Onions, Garlic and Carrots
Cut veggies into quarters and toss with olive oil and seasonings of your choice. Layer on baking dish. Lay stuffed chicken on top. Bake for 45 minutes – 1 hour at 350 until flesh is firm or meat thermometer reads 165 degrees.
Dice and mix together the salsa ingredients in small bowl. Set aside.
Mix together the radish and carrots with lime and pinch salt.
Add all the ingredients to the tortillas and enjoy!
