Health and Wellness Nourish Nourish Recipes Ground Turkey Stuffed Peppers & Sofrito Brown Rice

The yummy filling can also be used to stuff acorn squash or zucchinis!


What you need

Sofrito Brown Rice
  • Brown Rice
  • DIY Adobo seasoning
  • Sofrito
  • Brown rice instruction sheet
Ground meat mixture
  • Vegetable oil, divided
  • 1 pound ground turkey or beef
  • 1/2 pint button mushrooms, chopped
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup frozen kale
  • 1 can of diced tomatoes (low sodium)
  • Half 24 oz. tomato sauce (low sodium)
  • DIY adobo seasoning
  • Medium to large skillet
Stuffed pepper
  • 6 large peppers
  • Cooked Meat Mixture
  • Other half of 24 oz. tomato sauce (low sodium)
  • 1/2 cup cheese
  • Copped Parsley (garnish)
  • Baking Dish
Other
  • Salt and pepper
  • knife & cutting board

Instructions

Follow instruction for brown rice and let it cook
while preparing the rest.

Prep veggies for meat mixture:

  • Mince garlic cloves,
  • Dice onions,
  • Chop mushrooms, make sure kale is thawed
  • open can of diced tomatoes.

In a large skillet, add onion and adobo seasoning
and sauté till soft.

Add mushrooms. Cook garlic and then add the
ground turkey.

Cook turkey until browned and add frozen kale
and diced tomatoes.

Stir and taste the mixture for seasoning, adjust to
taste.

Add tomato sauce and bring to a simmer then
remove from heat.

Carefully remove core of the peppers by cutting
out around the top and discarding the stem.

In a baking dish, place peppers upright on the
base and stuff with meat mixture.

Top with cheese and more sauce & bake for 20
minutes.

Sprinkle Parsley on top!
